How To Rice Using Nnekasie Jollof Rice and Stew Seasoning.
Ingredients:
– 1 cup uncooked long-grain rice
– 2 cups water
– 2 tablespoons vegetable oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 teaspoon grated ginger
– 1 tablespoon Nnekasie Jollof Rice and Stew seasoning (adjust to taste)
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 bay leaves (optional)
– 2 tomatoes, chopped (fresh or canned)
– 2 Scotch bonnet peppers, chopped (optional, for some heat)
Instructions:
1. Rinse the rice in a fine-mesh sieve until the water runs clear. Drain and set aside.
2. Heat the oil in a large saucepan over medium heat. Add the onion, garlic and ginger. Cook, stirring occasionally, until the onion is translucent (about 5 minutes).
3. Add Nnekasie Jollof Rice and Stew, Curry seasonings, salt, and black pepper. Stir for 1-2 minutes, allowing the spices to bloom.
4. Add the chopped tomatoes, Scotch bonnet peppers and bay leaves. Stir well.
5. Add the rice to the saucepan, stirring to coat the rice with the spice mixture.
6. Add the water to the saucepan, bring to a boil, then reduce the heat to low. Cover the saucepan with a tight-fitting lid.
7. Simmer for 20-25 minutes or until the water has been absorbed and the rice is cooked.
8. Fluff the jollof rice with a fork and serve hot.
